Step by Step Brew Guide

 

Step 1 - Place a filter paper in the top of the Chemex, ensuring that the triple-layered side is facing the pouring spout.

Step 2 - Boil fresh water and allow the kettle to cool for 60 seconds to lower the temperature from boiling down to roughly 94°c.

 

Step 3 - Pour some hot water over and through the filter to avoid any papery taste.

 

Step 4 - Once the entire filter paper is wet, dispose of the water in the Chemex while keeping the filter in place.

 

Step 5 - Put your freshly ground coffee into the filter and give the Chemex a gentle shake to flatten out the coffee bed.

 

Step 6 -  Pour roughly a quarter of your total water making sure to wet the entire coffee bed and allow the coffee to bloom for 30 seconds.

 

Step 7 - Starting in the center, begin to gently pour around 100g of water at a time on the coffee and using a circular motion, make your way outwards until you reach the edge of the coffee bed before spiralling back towards the middle. Avoid pouring water down the sides of the filter.

 

Step 8 - As the water slurry level drops to around 3cm through the coffee, repeat the process in Step 7 until all the water has been poured over.

 

Step 9 - Serve & enjoy!
